Evidently, Tokaj is no longer the exclusive sweet wine region that it once was. In recent years, some of the region’s growers have come out with a variety of dry wines that have created quite a stir. We organized a roundtable symposium and tasting at the Ős Kaján restaurant in the commune of Tolcsva to find out how much sense a dry style can make in such a traditionally botrytis-dominated corner of the world.
